Pad Thai

I used this recipe here. I added about a third of a block of tofu, some broccoli, celery, carrots, and snowpeas. Garnished with cilantro and green onion.

OMFG. That's a definite keeper. Not something I can have everyday, since its got a little more fat in it than my normal fare, but it will be in semi-regular rotation for sure.

This morning I was out of oatmeal, and made the sauce (double batch) for this and poured it over 4 cups cooked brown rice, green beans, broccoli, and sauteed onions. Then I topped it with the leftover cilantro. YUM! It will be my breakfast, lunch, and maybe dinner, and I don't care.
