preheat oven to 400.

Boil a small bag of red potatoes, or smaller amount of larger potatoes with the skin on. While they are boiling and cooling, mix a HUGE handful of dark leafy greens (I usually use kale or frozen spinach), about 2/3 cup frozen peas, half a chopped white or yellow onion, chopped garlic, and basil (I used fresh this time because it was on sale, but I generally do dried). 'Sautee' in a dry non-stick pan on medium heat until onions and garlic are browned and frozen stuff is un-frozen, about 7-10 minutes. Mash potatoes with a little water or non-dairy milk, then add the contents of the saucepan to the potatoes, along with 1 TBS of Indian curry powder, 1Tsp black pepper, and 1TBS nutritional yeast (optional; it makes them creamier). Roll into 3" balls and bake on a sprayed cookie sheet until browned, about 15 minutes. Enjoy with the cheapest store bought mango chutney you can find! Takes about 40 minutes and made three meals for this single lady.
