Year Three

With all the happy hustle and bustle of the past week, I negected to mention that the three year anniversary of changing my diet occurred. On April 1st, 2012, I adopted a whole foods, plant based diet. This means that I eat no meat or dairy, and also have eliminated or greatly reduced the use of other refined foods, such as white flour and rice, oils, and sugar. This ranks right up there with the most significant decisons I've ever made for myself. Highlights:

  • The weight is still off. While I could probably aim for lower, I'm looking and feeling the way I prefer (mostly), so I'm cool for right now.

  • I'm in training for my fourth century ride, scheduled for the week after my 34th birthday.

  • I've made a few YouTube videos on cooking, and perhaps if Life ever slows down enough, I'll try my hand at a few more. :)

  • The Happy Herbivore, one of my favorite plant based cooks, featured me in as an Herbie of the Week, and followed up with a 'Where are They Now?' aritcle about a year later.

  • My health numbers are all spectacular: vitamin levels, blood sugar, A1C, cholesterol, blood pressure, etc.

  • I've started a Facebook Group called, 'Plants and Rants', which has over 50 members, that supports those of us who eat this way and like to let off some steam every once in a while.

More than anything, this year I've really mellowed and settled into my diet. I feel like my loved ones in particular are starting to realize this isn't a phase and are coming to a place of acceptance. Even those that weren't originally supportive can't argue with the results: a more awesome me! This is the new normal. :)
